Caprese Salad Eat Drink Binge

Caprese salad is a super simple, minimally prepared salad that is a classic in the summer when tomatoes are at its best. A great Caprese salad depends on the quality of its ingredients – sweet and juicy tomatoes, fresh mozzarella that is soft and creamy, and fresh basil to liven things up. Also, a good quality olive oil does make a difference. This is one of those things when a recipe may not be necessary, but here’s how I made mine.

INGREDIENTS

1 pound tomatoes (any kind/size that is ripe and delicious)
8 ounces fresh mozzarella ball or log (I used cherry-size balls, ciliegine)
basil leaves (a bunch)
extra-virgin olive oil
kosher salt & pepper (to taste)

INSTRUCTIONS

  1. Cut tomatoes and mozzarella into thick slices, or cut them in halves if using bite-size tomatoes or mozzarella balls like I did.  
  2. Arrange tomatoes and mozzarella cheese on a plate.  
  3. Drizzle with extra-virgin olive oil. Add salt and pepper. Top with torn or cut-up basil leaves.  Enjoy immediately.drizzling extra virgin olive oil onto Caprese Salad Eat Drink Binge
